The olives are harvested prematurely to obtain an exceptional oil. The olives are transported by refrigerated truck and pressed within 6 hours of their harvest.
Our oil is renowned for its unique citrus aromas and contains avery low acidity rate guaranteeing excellent preservation of the olive oil.
On the nose, it is an intense fruity aroma of green olives, with fruity nuances such as tomato, artichoke, fig, apple, banana and freshly cut grass.
Harvested at the very beginning of October, our olives are picked at the precise moment of their peak, at the exact moment when their emerald robe shines with golden reflections. Cold pressed on the same day, this exceptional cuvée reveals an intense and vibrant green fruitiness. A treasure of exigence: it takes no less than 4 kilos of olives to give birth to a single 50 cl bottle.
