A mountain Picual, harvested while still green. The olives are harvested early, transported by refrigerated truck and pressed within 6 hours of picking to preserve all their fruitiness.
The nose offers a powerful aroma of green olive, with hints of tomato, artichoke, fig, apple, banana and freshly cut grass. On the palate, the bitterness and spicy finish are characteristic of an early harvest oil. Its very low acidity ensures excellent shelf life.
